Sweet Sliced Cushaw

Ingredients

  • 1 medium-sized cushaw
  • 2 Tbsp butter (melted)
  • ¾ cup brown sugar
  • 2 tsp cinnamon

Directions

  1. Preheat oven to 400° F.
  2. Wash the cushaw squash thoroughly.
  3. Cut the neck of the squash into two pieces, then cut the bell of the squash in half and remove all seeds and stringy flesh.
  4. Slice the squash into uniform slices of your desired thickness and place them on a baking sheet.
  5. Combine brown sugar and cinnamon in a bowl and set aside.
  6. Melt butter, then brush onto the cushaw slices.
  7. Sprinkle the brown sugar and cinnamon mixture evenly over the slices.
  8. Bake for 50–60 minutes or until fork-tender and lightly caramelized.
