Watermelon Feta & Sweet Corn Salad

Ingredients
- 6 cups cubed Sarah’s Homegrown watermelon
- 2 ears of Sarah’s Homegrown sweet corn
- 4 oz crumbled feta cheese
- 1/2 red onion, sliced
- 3 sprigs of mint, torn
- 1/4 cup lime juice
- 1 clove of garlic, grated
- 2 tbsp olive oil
- Salt
Instructions
- On a medium grill, cook the corn, turning often, until it reaches desired color. Let cool.
- Once cool, slice the corn off the cob.
- In a large bowl, add the watermelon, corn, red onion, feta, and mint and toss together.
- In a small bowl, whisk together the lime juice, garlic, olive oil, and salt.
- Pour the lime juice mixture over the watermelon salad and toss to coat.
- Serve cold with more mint as a garnish if desired.
