Watermelon Feta & Sweet Corn Salad

Ingredients

  • 6 cups cubed Sarah’s Homegrown watermelon
  • 2 ears of Sarah’s Homegrown sweet corn
  • 4 oz crumbled feta cheese
  • 1/2 red onion, sliced
  • 3 sprigs of mint, torn
  • 1/4 cup lime juice
  • 1 clove of garlic, grated
  • 2 tbsp olive oil
  • Salt

Instructions

  1. On a medium grill, cook the corn, turning often, until it reaches desired color. Let cool.
  2. Once cool, slice the corn off the cob.
  3. In a large bowl, add the watermelon, corn, red onion, feta, and mint and toss together.
  4. In a small bowl, whisk together the lime juice, garlic, olive oil, and salt.
  5. Pour the lime juice mixture over the watermelon salad and toss to coat.
  6. Serve cold with more mint as a garnish if desired.
